Since going back on spirit at Wolfburn in early 2013 we continue to distill, mature and bottle on site in Thurso. Traditional pot stills of 5,500 litres and 3,800 litres respectively send spirit weekly to the dunnage warehouses where we mature our spirit in a combination of second fill american oak quarter casks, first fill american oak ex bourbon casks and first and second fill spanish oak ex sherry casks.

The bottling hall, in use since early 2016, gives us great flexibility to bottle both our general editions but also smaller more specialist bottlings for those gems that sometimes turn up in the warehouse during routine sampling.  Produced and bottled to the highest standards, none of our whisky is either chill filtered or coloured.

The Wolfburn distillery, situated just 350m from the original 19th Century Thurso site, has been successfully commissioned and production of fine single malt whisky started in 2013

Construction of the Wolfburn buildings was carried out by a group of local contractors, with the inner workings being crafted by Forsyths of Rothes, the world-leading distillery fabricators.

“This is an enormously exciting moment for everyone involved,” commented Shane Fraser, Wolfburn production manager. “To watch the distillery go from concept to reality has been a truly superb experience. Commissioning went very smoothly indeed – the equipment performed exactly as expected – and the first casks are already full of spirit.”

The first Wolfburn distillery was built in 1821 and was passed down through subsequent generations of the Smith family; in its heyday it was the largest distillery in Caithness.  Production ceased during the latter half of the 19th Century – the exact date is not known.  The first bottling of the next generation of Wolfburn single malt whisky is expected in early 2016.
